PEEPS® Carrot Patch Cupcakes

INGREDIENTS
- 1 box of chocolate cake mix
- 3 large eggs
- ½ cup vegetable oil
- 1 cup water
- 2 (16oz) cans chocolate frosting
- 1 cup chocolate cookie crumbs
- 12 fresh strawberries
- 1 (12oz) package orange chocolate wafers, melted
- 2 packages PEEPS® Chocolate Pudding Flavored Bunnies
- 24 cupcake liners
- 24 flower pot holders

INSTRUCTIONS
- Combine the cake mix, eggs, oil, and water in a large bowl. Blend with a hand mixer until smooth. Fill each cupcake liner halfway with batter, then bake at 350F for 15-18 minutes. Allow the cupcakes to cool to room temperature.
- Core the center of each cupcake, then place into the flower pot holders.
- Pipe a ring of chocolate frosting onto the outer edge of each cupcake, cover top in cookie crumbs.
- To make the carrots, dip each strawberry into the melted orange chocolate, then allow the chocolate to harden. Drizzle a small amount of the melted chocolate over each one to look like the lines on a carrot.
- Add the strawberries and PEEPS® Chocolate Pudding Flavored Bunnies to the middle of each cupcake, pressing them into the “dirt” slightly.
