WHAT YOU NEED

Ginger Cookies

  • 3/4 cup light brown sugar
  • 1 cup room temperature butter
  • 2 tablespoons unsweetened baking cocoa powder
  • 3-5 teaspoons baking powder
  • 2 1/2 cup whole wheat flour

  • Sprinkles
  • Candy
  • Gum drops
  • Coconut flakes

Royal Icing

  • 2 chilled egg whites (preferably pasteurized)
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar

INSTRUCTIONS

Gingerbread

  1. In the mixing bowl of your stand mixer, add the butter and sugar. With the paddle attachment, beat on low speed light and fluffy, about 3 minutes.
    Gently add in the remaining dry ingredients beat until just combined.
  2. Remove the cookie dough from the mixing bowl, wrap it in plastic wrap and place it into the fridge for about 30 minutes to an hour.
  3. Once chilled, take the cookie dough out of the fridge and place it on a piece of parchment paper.Put another piece of parchment paper on top of the cookie dough, and with a rolling pin, roll the dough to about 1/4 inch thick.
  4. cut the house
    • roof (2 pieces) 8 inches by 6 inches
    • front and back 7 inches by 3 inches by 6-1/2 inches
    • sides (2 pieces) 7 inches by 3 inches
  5. Arrange the cookie pieces on a baking tray and place it back into the fridge while you preheat the oven.
  6. Heat the oven to 350F.
  7. Bake the chilled cut out pieces for 15-17 minutes.
  8. Let the cookies cool completely on the baking sheet.

Royal icing

  1. Fit your stand mixer with the whisk attachment. In the mixing bowl, combine the egg whites and vanilla and whisk until frothy.
  2. Add powder sugar gradually and mix on low speed until the sugar is incorporated and the mixture is shiny.
  3. Turn the speed up to its highest setting and beat until mixture forms stiff, glossy peaks, about 5 to 7 minutes

Assemble the house

  1. Place the royal icing in two piping bags. Set one aside.
  2. Cut a tiny corner in the other one and pipe royal icing along the sides of the house pieces. Hold them together to form the gingerbread house.
  3. Let the house dry for a couple of hours before decorating it.
  4. Cut a tiny corner to the second bag of royal icing. Pipe royal icing on the roof of the house, along side the door and the windows. Decorate with sprinkles, candy and gumdrops as you please.
  5. To assemble the village you’ll need several gingerbread houses placed on a white board. Sprinkle coconut flakes all over the place to mimic snowflakes.
  6. With the help of toothpicks, arrange throughout the village.
