PEEPS^® S’mores Rocky Road Cups

INGREDIENTS

½ cup Crisco^® All-Vegetable Shortening
10 Tbsp. brown sugar
6 Tbsp. granulated sugar
1 large egg
1 tsp. vanilla extract
1 ¼ cups all-purpose flour
½ tsp. baking soda
¼ tsp. salt
1-10 oz. bag mini semi-sweet chocolate chips
1/3 cup chopped pecans
1-3 oz. package PEEPS^® Brand Marshmallow Chicks or Bunnies, chopped into small pieces
4 pkgs. PEEPS^® Delights^™ S’mores Graham Cracker Flavored Marshmallow Chicks

Preheat oven to 375° and spray a 12-cup muffin tin with no-stick spray
With an electric mixer, cream together the Crisco^® All-Vegetable Shortening and sugars until creamy
Scrape the sides of the bowl
Add the egg and extract and blend well
Add the flour, a little at a time, and blend on low until mixed
Stir in 1 cup chocolate chips
Scoop out into 3 tablespoon portions into the muffin tin
Bake for 12 minutes then remove from the oven
Use the back of a tablespoon to make a shallow indentation in each cookie
Add the remaining chocolate chips, nuts and chopped PEEPS^® to the cups and return to the oven for 1 minute
Remove from the oven and top each one with a PEEPS^® Delights^™ S’mores Flavored Marshmallow Chicks
Allow to cool then remove from the muffin tin
