PEEPS® S’mores Rocky Road Cups

INGREDIENTS
- ½ cup Crisco® All-Vegetable Shortening
- 10 Tbsp. brown sugar
- 6 Tbsp. granulated sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1 ¼ cups all-purpose flour
- ½ tsp. baking soda
- ¼ tsp. salt
- 1-10 oz. bag mini semi-sweet chocolate chips
- 1/3 cup chopped pecans
- 1-3 oz. package PEEPS® Brand Marshmallow Chicks or Bunnies, chopped into small pieces
- 4 pkgs. PEEPS® Delights™ S’mores Graham Cracker Flavored Marshmallow Chicks

INSTRUCTIONS
- Preheat oven to 375° and spray a 12-cup muffin tin with no-stick spray
- With an electric mixer, cream together the Crisco® All-Vegetable Shortening and sugars until creamy
- Scrape the sides of the bowl
- Add the egg and extract and blend well
- Add the flour, a little at a time, and blend on low until mixed
- Stir in 1 cup chocolate chips
- Scoop out into 3 tablespoon portions into the muffin tin
- Bake for 12 minutes then remove from the oven
- Use the back of a tablespoon to make a shallow indentation in each cookie
- Add the remaining chocolate chips, nuts and chopped PEEPS® to the cups and return to the oven for 1 minute
- Remove from the oven and top each one with a PEEPS® Delights™ S’mores Flavored Marshmallow Chicks
- Allow to cool then remove from the muffin tin
Note: Use extreme caution when heating PEEPS® Marshmallow; they may be hot. Handle with care.
